Chef’s Recipe: Choumicha’s Chocolate Fekkas
On our amazing trip to Morocco for an episode of Anna & Kristina's Grocery Bag, we had the fabulous pleasure of meeting (and cooking for) one of Morocco's most famous celebrity chefs, Choumicha. She shared with us her delicious recipe for these chocolate treats!
Prep Time: 25 mins
Total Time: 2 hours and 55 mins
Ingredients:
250g dark chocolate
40g butter
100ml cream
25g walnuts, roasted and coarsely crushed
30g raisins, chopped into little pieces
50g candied orange peel, thinly chopped
For decoration: 80g roasted almonds coarsely crushed
Directions:
Melt the chocolate in a bain-marie (double boiler). Stir in the butter and cream until well blended. Remove from the heat and mix in the walnuts, raisins and orange peel.
Refrigerate for 2 hours until the paste is firm. Shape the paste into long sausages and roll on the crushed almonds. Wrap them in plastic wrap and set them aside in the fridge again for 30 min.
Before serving, cut the sausages diagonally in 5cm long pieces. Place the chocolate fekkas in paper crates (e.g. cupcake liners) or cake moulds for presentation.
